How do we make fresh-cut fries daily?
We start by sourcing special potatoes called Chippers from a community of over 20 growers and 35 farms primarily in California, Idaho, Washington and New Mexico. These potatoes are characteristically large and round in shape, with distinctly thin skin with low sugar content.
These potatoes are delivered to each location several times a week, and that’s where the fry magic begins. Daily, we carefully wash and cut the potatoes, leaving their skin on. They are vigorously rinsed again to ensure the excess starch has been removed. Next, we blanch the potatoes to cook them before setting them aside to chill.
Once an order has been placed the potatoes are fried for a second time at a higher temperature to give them their beautiful golden-brown color and firm, slightly crispy texture. We finish them off by tossing them in our signature fry seasoning and serve them hot. Enjoy!
